What to Put on Pasta Instead of Sauce

Pasta and tomato sauce go along so well that we forget they don’t have to be served together all of the time. Instead of having to pick between making a drive to the shop and forgetting about it, if you find yourself with pasta and no tomato sauce — or perhaps tomato sauce and no pasta — at home, you can make a dash to the store and forget about it.

In addition to traditional pasta dishes, there are a variety of creative things you can do with pastaless sauce. This week, we’ll be focusing on pasta. If you don’t have any sauce, you can use the following:

  • Just before serving, toss the cooked pasta with the canned chopped tomatoes. To make your own tomato sauce, just drain the tomatoes and purée them in a food processor, then heat them and add spices, maybe adding some of the drained off juice to thin it out if necessary. If they’re already seasoned, that’s all you need to do
  • If they aren’t, at the very least season with salt and pepper. If you have tiny tomatoes, such as cherry or grape tomatoes, chop them in half and mix them with the pasta in the same manner as described above. Fill the colander halfway with fresh, washed spinach (a package of spinach salad would do just fine). Drain the pasta while the spinach is still wet. The heat and water will just slightly cook the spinach, but it will still be delicious. It should be well mixed into the spaghetti. Make a cheese sauce to go with it. There are instructions for making your own here and here. Plain white sauce, on the other hand, is a far more straightforward alternative (cheese sauce without the cheese). Drain a few sliced olives and mix them with the pasta to finish the dish. This is delicious on its own, but it also works well as a complement to the tomato alternatives listed above. A prepared topping for pasta is made up of vegetables that can be sautéed rapidly — such as onions, garlic, mushrooms, and sweet peppers — or that can be softly steamed, such as broccoli — It’s okay if the eggplant takes a bit longer to cook than you want, and summer squash such as zucchini tends to get watery when cooked
  • Toss sour cream with a pinch of flavor, such as bouillon powder, then combine with the drained pasta until everything is well combined. To prevent the cream from curdling, add a pinch of blending flour and cook a clove of garlic in a large amount of butter for only a couple of minutes until it is golden brown, stirring constantly. Pour the garlic butter over the spaghetti and toss to combine. If you’re looking for a particularly rich meal, you could even combine it with sour cream
  • Make your own pesto from scratch. Pesto prepared with red peppers and homemade basil or parsley pesto are both excellent choices.
