Creamy pasta salad dressing
Mayonnaise is the starting point for my creamy pasta salad. Replace Miracle Whip with anything else: that stuff is horrible (at least in my opinion), it isn’t actually mayonnaise, and it is far too sweet for this salad dressing.
I use vinegar to give it a little tang and sugar to give it a little sweetness. I also use herbs and spices such as onion powder, salt and pepper, as well as a blend of Italian herbs in the recipe.

Before adding more spaghetti, make sure everything is properly combined. Adding the cooked pasta to the dressing and veggie mixture is the next step. Keep in mind that I’ve used a variety of various pasta shapes here because I had some pasta scraps to use up!
Simply store in the refrigerator in an airtight container until you’re ready to serve at a potluck, barbecue, or picnic.

If you have chilled pasta, be certain that it has been thoroughly drained. This isn’t the time for a dripping pasta salad. In a large mixing basin, combine the pasta with the dressing, vegetables, cheese, and pepperoni. Stir well. Before adding any additional spaghetti, make sure everything is completely combined. Cooked pasta should be combined with the dressing and veggie mixture. Remember that I used a variety of different pasta shapes here since I had some leftover spaghetti to use up! Then it’s just a matter of chilling the salad before presenting it to guests.

Assuming that this pasta salad would be served as a side dish, a serving size of 34 cup per person is appropriate. Due to the large amount of vegetables, pepperoni, and cheese in the salad, the actual cooked pasta quantity is probably closer to 12 cup per person rather than 1 cup. Considering that a standard 1-pound box of pasta generates 8 cups of cooked pasta, one box should be plenty to feed around 16 people. However, because this pasta salad is so delectable, I’d guess that it will serve closer to 12–14 people.
This salad is simple to prepare and may be prepared a day or even two ahead of time.

Ingredients
- 1 pound pasta (see Recipe Note1 for measurements)
- 1 big red onion (about 1 12 cups), roughly chopped
- 1. 1 big (about 1 cup) green bell pepper, coarsely chopped 3 celery ribs (about 1 cup), finely chopped
- 3 carrots, finely diced
- Cubed cheddar cheese (optional)
- 4 oz pepperoni (optional)
- 4 oz shredded mozzarella cheese (optional)
FOR THE DRESSING
- Recipe calls for 1 12 cup mayonnaise, 2 tablespoons rice vinegar, 14 cup granulated sugar, 1 teaspoon onion powder, and 2 tablespoons herby spice mix (see Recipe Note2 for details). 12 teaspoon coarse salt (plus additional salt for seasoning pasta water), or to taste 12 teaspoon freshly ground black pepper, or more or less to taste
Instructions
- Bring a large saucepan of well-seasoned water to a rolling boil. Cook the pasta according to the package directions (see Recipe Note3)
- Drain well. In the meantime, prepare the dressing by combining all of the ingredients in a large food storage container and mixing thoroughly. Mix the cheese cubes into the dressing, making sure that each piece is well coated on both sides with the dressing. Repeat the process with the pepperoni. In a large mixing bowl, combine the veggies
- When the pasta is through cooking, drain and rinse well with cold water for several minutes
- Add approximately half of the pasta and combine thoroughly. Toss in the remaining spaghetti (see Recipe Note3) until everything is well combined. Make sure to chill the dish for at least an hour before serving.
Notes
- I prefer elbow macaroni, penne, or a combination of the two. When using mixed pasta, make a note of any changes in cooking time that may exist. Because you don’t want overcooked pasta to be combined with underdone pasta, my current favorite seasoning blend is Sunny Paris from Penzey’s Spices. Ingredients include shallots, chives, green peppercorns, dill leaves, basil, tarragon, chervil, and bay leaf, among other things. However, any seasoning blend will suffice in this case. I would merely advise staying away from anything that involves a lot of oregano, as it may be overbearing
- Some people want more sauce in their pasta salad, which I understand. By including the first half of the pasta and thoroughly mixing it in, then gradually incorporating the remaining pasta, you not only guarantee that the spaghetti is well coated, but you may also use less pasta if that is your desire.
