  1. Melt the butter in a large pan over medium high heat until it has melted. Cook, turning regularly, until the garlic is aromatic, approximately 1-2 minutes

Pasta Recipes: Linguine with Lemon

Preparation time: 5 minutes Cooking Time: 30 minutes Time allotted: 35 minutes Serves2

  • Arugula, fresh thyme, 1 cup roasted tomatoes, 3 ounces fresh mozzarella, torn, 14 cup toasted pine nuts, 12 cup fresh basil, or dollops of pesto, 6 ounces linguine pasta, 1 1/2 cups arugula, 1 tablespoon fresh thyme, 1 tablespoon fresh lemon juice, 4 very thin lemon slices, 1 tablespoon extra-virgin olive oil, minced garlic, 1 tablespoon lemon juice, 6 ounces lingu Sea salt and freshly ground black pepper are both excellent choices.
  • Prepare a small baking sheet by lining it with parchment paper and preheating the oven to 350°F
  • Place the lemon slices on a baking sheet and set aside. Drizzle with olive oil and season with salt and pepper. Roast for 15 to 20 minutes, or until they’re golden brown around the edges, depending on how large they are. Set the lemons aside after they have been finely minced. The olive oil, garlic, lemon juice, and 14 teaspoon sea salt should be mixed together in the bottom of a medium-sized (cold) saucepan. Cook the pasta according to the package guidelines, until it is al dente (firm to the bite). 14 cup of the pasta boiling water should be set aside. Toss the heated pasta into the saucepan with the conserved pasta water, the arugula, and a pinch of salt and pepper. If necessary, gently cook the dish until the arugula wilts and the pasta is heated all the way through. Toss in the herbs, tomatoes, and lemons until well combined. Add the mozzarella, pine nuts, and basil on top and mix well. Toss gently, season with salt and pepper, and serve.

You might be thinking to yourself as you read this: aren’t buttered noodles just cooked noodles with melted butter? It’s possible that they are, but when you swirl noodles into a combination of starchy pasta water, butter, and parmesan, they taste a million times better. Remember the fettuccine alfredo recipe that we just shared?

Here’s what we had to say: We use butter, parmesan cheese, and starchy pasta water for cream in our recipe, which results in a richer, creamier result.” When the pasta water contains starch, the butter and cheese are thickened to create a velvety smooth sauce that covers the noodles.” And it’s true for both fettuccine alfredo and this buttered pasta dish.

You Will Need

8 ounces egg noodles or any type of pasta of your choosing 1 cup finely grated parmesan cheese (plus extra for serving) 1 teaspoon salt 2 teaspoons of melted butter a handful of herbs, such as basil, parsley, or chives, chopped or torn Peppercorns that have been freshly ground are used for serving.


  • In a medium-sized saucepan, bring water to a boil (we use 6 to 8 cups of water). Add the noodles and 1/2 teaspoon of salt and mix well. Cook, stirring once or twice, for 2 minutes less than the recommended cooking time on the container, or until the vegetables are tender. When preparing the sauce, the pasta will be finished cooking. Toss 1 cup of the pasta boiling water into a separate bowl before draining and returning the pasta to the saucepan. Toss the noodles with the parmesan, butter, and 1/2 cup of the cooking water that was saved. Place the saucepan on a low heat setting. For one minute, mix the noodles, butter, and cheese around the pan with tongs until everything is evenly coated. Remove the pan from the heat and cover it with a lid to keep the heat in. Allow one minute to pass. Remove the lid from the saucepan and toss the noodles in the sauce a few more times. If the pasta appears to be dry, a small amount of pasta water can be added. If it appears to be too wet, don’t be concerned
  • The pasta will absorb some of the excess moisture as it cools. Season with salt and pepper to taste after stirring in the herbs. More parmesan and freshly ground black pepper should be sprinkled on top before serving.

  • Mince one (or more) cloves of garlic to use in the preparation of garlic butter noodles. In a small pan, saute the garlic and 2 tablespoons of butter over medium-low heat until the garlic is fragrant. GARLIC AND LEMON WITH ARUGULAHheat 12 cup olive oil and 2 tablespoons butter in a pan over medium heat until the garlic is soft.

Season with salt and freshly ground pepper.

Garnish with grated Parmesan cheese if desired.

PUTTANESCA is number thirteen.

a small bunch of flat-leaf parsley, roughly chopped; 2 cans diced tomatoes; 1 tablespoon capers; 2 anchovies, drained and chopped; 2 tablespoons capers; a handful of sliced green olives; red pepper flakes; and a small bunch of flat-leaf parsley, roughly chopped Cook for 10 minutes on low heat.


Cook and stir until the onion is soft, adding 1 chopped onion and 2 smashed garlic cloves as needed.

Taste and season with red pepper flakes to your liking.

Fold in 2 (6-ounce) cans of tuna that have been drained and heat thoroughly.

Toss in the cooked, drained pasta along with a handful of freshly torn basil leaves.

Mix in hot, drained pasta after seasoning it with salt and pepper to taste.
