Eggplant Parm with Egg Pasta

  • 2-tbsp. EVOO (Extra Virgin Olive OIl)
  • 1 little onion, finely chopped
  • 1 medium-sized onion, finely chopped
  • 2 garlic cloves, pasted (minced, then mashed with salt), or grated
  • 1 28-ounce can San Marzano tomatoes
  • 1 14-ounce container tomato sauce or puree
  • 1 28-ounce can San Marzano tomatoes a handful of basil leaves, broken into pieces, with a few more for decoration
  • Seasoning with salt and pepper
  • 4 tiny firm eggplants, cut lengthwise into 1/4-inch slices
  • 4 small firm eggplants, cut lengthwise into 1/4-inch slices
  • Flour for dredging purposes
  • 2 big eggs, lightly beaten with a dash of water, set aside. 1 1/2 cups breadcrumbs (estimate by eyeballing it)
  • 1 cup grated Parmigiano-Reggiano, divided
  • 1 cup grated Parmesan-Reggiano, divided
  • 1/4 cup flat-leaf parsley, coarsely chopped
  • A handful of flat-leaf parsley Olive oil is used for frying. 1 pound fresh mozzarella ball, finely sliced
  • 1 pound egg tagliatelle or fettuccine
  • 2 tablespoons butter

In a saucepot, heat the EVOO over medium heat until shimmering. Add the onions and simmer for 8-10 minutes, stirring occasionally. Cook for another 2 minutes after adding the garlic. Toss in the tomatoes and sauce (or puree), a few sprigs of basil, salt, and pepper. Reduce the heat to low and cook for 25-30 minutes, stirring regularly and breaking up the tomatoes in the process. Meanwhile, season the eggplant slices with salt and allow them to drain for 30 minutes in a strainer. Preheat the oven to 375 degrees Fahrenheit.

  • Bake for 30 minutes at 350 degrees.
  • Pour oil into frying pan and fry eggplant for 3-4 minutes on each side, then drain on paper towels laid over cooling rack.
  • Place part of the tomato sauce in the bottom of a casserole dish and stack the eggplant on top in an overlapping layer.
  • Bake for 20 minutes, or until the mixture is bubbling.

Cook the pasta until it is al dente, drain, and return to the saucepan, reserving the cooking liquid. Toss the spaghetti with a tablespoon of butter, a handful of cheese, and a splash of tomato sauce. Serve the eggplant parm with a side of spaghetti to complete the meal.

Do you like a tasty Italian cuisine when you get the chance? If that’s the case, this blog article is for you! It’s possible that you’ve never heard of eggplant parmesan before. It is believed that this dish dates back to the early 1900s and was popularized by chefs such as Julia Childs and Mario Batali. One of the reasons it’s so popular is because it’s so simple to make, but it’s also overflowing with flavor thanks to the variety of spices we use. So you’re trying to figure out what to serve with your eggplant parmesan, right?

Baked Eggplant Parmesan Penne Recipe



  • Step 1: Heat the oil in a large saucepan over medium heat until shimmering. Cook over moderate heat, turning occasionally, until the onion is softened, about 5 minutes. Remove from the pan and set aside to cool completely. Cook, turning occasionally, until the eggplant is soft but not falling apart, approximately 10 minutes. Remove the eggplant from the heat and set aside. Cook, stirring constantly, for 1 to 2 minutes, or until the garlic and crushed red pepper are aromatic. Cook, scraping up any browned pieces from the bottom of the pan, until the marinara sauce is hot, 3 to 5 minutes, stirring often. Advertising
  • In the meantime, preheat the broiler and put the rack 8 inches from the fire. Advertising
  • Cook the penne till al dente in a large pot of boiling salted water until the pasta is tender. After draining the pasta, save 1/2 cup of the cooking water for later use. Season with salt and pepper after adding the pasta, boiling water, and basil to the sauce. Step 3: Scrape the pasta into a large oval baking dish or a 9-by-13-inch baking dish using a big spoon. Sprinkle the mozzarella over the spaghetti, then top with the Parmigiano-Reggiano and the panko. The spaghetti should be broiled for 3 to 5 minutes, or until the cheese has melted and the panko has become lightly browned. Serve when still heated.


One serving has 512 calories, 10 grams of fat (3.9 grams of saturated fat), 89 grams of carbohydrates (16 grams of fiber), and 23 grams of protein.
