  1. Then, with the roller adjustment knob still in place, turn it to the number “1.” Release the knob, ensuring that the pin on the roller housing engages the aperture on the back of the adjustment knob, enabling the knob to rest flush against the roller housing

  1. Set the Stand Mixer to “2” on the speed dial. Feed the flattened dough into the rollers so that it may be kneaded. Roll the dough out again after folding it in half. Repeat until the dough is smooth and malleable, and it completely covers the width of the roller (about 10 minutes). To help in drying and separating of the pasta, lightly coat it with flour when rolling and cutting it.
  1. Feed the dough through the rollers to flatten the sheet of dough even further. Change the roller setting to “3,” and then repeat the rolling operation once again. Maintain a constant increase in roller setting until you get the required thickness. It is not necessary to fold the dough at this stage.

This Pasta Roller and Cutter Set, which connects directly to your KitchenAid Stand Mixer, allows you to enjoy the flavor of freshly made pasta in the comfort of your own home. In order to achieve the proper thickness, the Pasta Roller is used to guide sheets of fresh handmade dough through it. Attaching the Pasta Roller and Cutter

Remove the label that says “Do not immerse in water” from your attachments before using them. It is not recommended to wash or immerse attachments in water or other liquids to avoid damage. Dishwashers should not be used. Please keep in mind that these attachments are only intended for use with pasta dough. If you want to keep your Pasta Roller and Cutters in good condition, avoid cutting or rolling anything other than pasta.

Attaching the Pasta Cutter

  1. Remove the attachment hub cover from the Stand Mixer and turn it off and disconnect it.

How to Make Homemade Pasta with KitchenAid

Is it possible for us to have a heart to heart? I’ll admit that I was apprehensive about making my own pasta for a long time. If you’re anything like me, you’ll understand completely. But now I’m no longer afraid, and I honestly think it was a mistake that I was so afraid for such a long period of time. With the assistance of my stand mixer and the KitchenAid pasta attachment, I was able to do the task considerably more swiftly and efficiently. When I texted this image to a friend, she responded by saying, “You’re obsessed now, aren’t you?” Yes, I’m addicted, and I’m always experimenting with new flours.

Homemade Pasta Recipe

11/4 pound of dough (servings) Preparation time: 1 hour 15 minutes Time allotted: 1 hour and 15 minutes

  • 3 4 and a half cups sifted all-purpose unbleached flour (plus more flour for preparation)
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 4 big eggs, lightly beaten
  • In a mixing basin, combine the eggs, water, flour, and salt. Attached are a mixing bowl and a flat beater. Toss the ingredients in a mixing bowl at speed 2 for 30 to 60 seconds. If the dough is too dry, add more water in 1/2 Tablespoon increments until the dough is moist. Replace the flat beater with a dough hook to complete the transformation. Slowly knead the dough for 2 minutes at speed 2. Remove the dough from the mixer and knead it by hand for two minutes. Allow yourself 20 to 30 minutes of resting time. Before processing the dough with the pasta sheet attachment, divide it into four pieces. Take one of the pieces and flatten it into a rectangle shape using your hands. Using flour on both sides of the pan. Make certain to cover all of the other parts. Attach the pasta sheet roller to your stand mixer and set it to number one on the speed dial. Toss the pasta dough through the pasta sheet roller while the stand mixer is running at speed 2. While the machine is running on 1, fold the dough in half and put it through again. I repeat this process numerous times, each time adding a small amount of flour to each side of the dough. After that, I turn the setting to 2 and run the pasta dough through the sheet roller. I repeat this twice more, and then on the third and fourth times each. Avoid using the fourth setting if you like a thicker dough
  • Once again, sprinkle flour on either side of your long pasta sheet. To use a spaghetti or fettuccine cutter, change the attachment to the second setting on your machine. Carry the pasta sheet through the cutter with your left hand, holding on to the spaghetti sheet as it passes through the cutter. As a result, it’s generally rather long, so I cut it and wound it around my palm to form a nest. It only takes 3 to 7 minutes to cook pasta
  • The fettuccine cutter works best for this pasta dish
  • Allow pasta to dry for a few minutes before boiling
  • Allow pasta to dry for several minutes before boiling

To dry your pasta, use clean plastic clothes hangers or an apasta drying rack to hang it on. {Video} How to Make Spaghetti with KitchenAid®

Have you ever tried your hand at making fresh handmade pasta? The process of making spaghetti at home is actually rather simple. A little patience is required, but in less than 30 minutes you’ll have a batch of fresh pasta ready that will blow your mind. Fortunately, I can also thankKitchenAid for this! They have some of the most incredible pasta accessories. To be quite honest, if it weren’t for theirpasta attachments, I would most likely not be cooking pasta at all. Simple to use and simple to clean–just the way I like my stuff.

  • So, what are your thoughts.
  • Put an end to your fear.
  • This is something I’ve mentioned several times this year.
  • I mean, only a few weeks ago, I was in my kitchen preparing freshly baked Italian bread.
  • A freshly baked loaf of Italian bread is served alongside freshly prepared spaghetti and bolognese sauce.
  • There will be no packaged spaghetti, no baked bread from the shop, and definitely no jarred sauce.
  • When my spouse informed me that the salad was not cooked entirely from scratch, I thought I’d hit a home run.

I picked a few cherry tomatoes that were still on the vine.

My own two hands were used to prepare the dinner.

In order to prepare the most delectable SpaghettiBolognese they have ever eaten, I am looking forward to having relatives in town.

Not to mention the fact that I prepare my entire dinner from scratch.

I’ve cooked several batches of pasta so far, each time improving on my newly acquired pasta-making abilities!

It is essential that the dough has the proper consistency.

If the dough is too dry, it will break apart, and you will not obtain the pasta texture and consistency that you were hoping for.

  • 1 cup sifted all-purpose flour
  • 1 teaspoon salt
  • 14 cup water (start with 2 tablespoons)
  • 4 big eggs

Making the Spaghetti Dough:

  • Place the eggs, flour, salt, and 2 tablespoons of water in the bowl of a stand mixer and beat until well combined. Attach the flat beater to the bowl and use speed 2 to mix the contents for 30 seconds until they are well combined. Remove the flat beater and replace it with a dough hook to complete the process. On speed 2, knead the dough for 2 minutes until it is smooth and elastic. If the mixture appears to be too dry at this point, add 1 tablespoon of water at a time until it is moistened. With your hands, remove the dough from the bowl and continue to kneed it for 1-2 minutes. (Do not omit this step
  • It is critical to the proper rolling out of the dough. Kneading by hand will aid in the digestion of the gluten.) For 20 minutes, cover the dough with plastic wrap and allow it to rest in a warm location.

Rolling the Spaghetti:

  • Divide the dough into four equal pieces (keeping the dough you aren’t working with covered with a moist paper towel/kitchen cloth/plastic wrap while you are working with it)
  • The Pasta Sheet Roller accessory should be connected to your stand mixer. Make a flattened disc out of one of the four pieces of dough and flatten it to approximately a half-inch thickness. Once you’ve set the Pasta Sheet Roller to setting 1 and the speed on your stand mixer at 2/4, proceed to carefully feed the dough through the attachment. Once this is done, fold the dough in half and then half again. Check to see that it fits snugly into the top of the attachment. After that, pass it through the Pasta Sheet Roller once more. Next, adjust the setting on your Pasta Sheet Roller to number 2 and carefully pass the dough through it. Keep repeating this process, increasing the setting all the way to 5 until you get a thin layer of pasta. I usually split the spaghetti sheet in half or in thirds by using the setting 2 or 3
  • This makes it much simpler to handle and manipulate. If you don’t, you’ll end up with some ridiculously lengthy spaghetti. Remove the Pasta Sheet Roller from the stand mixer and replace it with the Spaghetti attachment. Repeat the process until you have 2 thin sheets of pasta. Using the Speed 2 setting on the mixer, begin to carefully feed the sheet of spaghetti through the attachment. As soon as you’ve sliced your spaghetti, lay it flat on a floured surface or on a drying rack for 5-10 minutes before you begin cooking it.

Cook the Spaghetti:

  • Cook the spaghetti for 3-4 minutes, or until al dente, in a saucepan of boiling water with 1 tablespoon of salt.
  • Recipe Yield- This recipe makes around 1-14 pound of pasta. Typically, this amount will serve 8 people. Hole formation in Dough- If you are starting at the rolling flat phase and you see that the dough is not expanding and instead producing holes, it is likely that you have not handled the dough sufficiently by hand or that the dough is too dry to roll out. Try working the dough for another 2-3 minutes and allowing it to rest for at least 5-10 minutes before attempting to feed the dough onto the flat roller attachment
  • This should yield better results. Making Pasta- When making pasta, I usually cut the pasta sheet in half once the flattened sheets have passed through setting 2 or 3. This makes the pasta sheet much simpler to deal with. For drying pasta, hang or lay flat the cut spaghetti strands and allow them to dry for 2 hours or overnight, depending on how long you want the pasta to be dry. In order to nest the pasta, allow it to dry for at least 10 minutes before spinning tiny quantities of spaghetti into a nest and setting it aside to dry further. Dried pasta should be stored in an airtight bag or container. A well sealed container can keep it fresh for up to one month.

Approximately 1-1/4 pound of pasta is produced by this recipe. A typical portion serves 8 people; however, this may vary. Hole formation in Dough- If you are starting at the rolling flat phase and you see that the dough is not expanding and instead producing holes, it is likely that you have not handled the dough sufficiently by hand or that the dough is too dry to deal with. Attempt to work the dough for another 2-3 minutes before allowing it to rest for at least 5-10 minutes before attempting to feed it onto the flat roller attachment.

This makes the pasta sheet much simpler to handle.

Lay out the pasta to dry for at least 10 minutes before spinning it into a nest and allowing it to dry for another 10 minutes; Nesting Pasta Dried pasta should be stored in an airtight bag or container to prevent bacterial contamination.

Cut the dough into quarters, then take one quarter and press it flat with your palm. Feed dough into roller while mixing on speed 2 with roller set at the widest setting. The dough should catch on the other side of the roller. Fold and feed the dough through again
  • This is the process of kneading the dough. Continue to roll out the dough until it is as broad as the roller. Once it is wide enough, continue to feed dough through it, tightening the knob with each feeding until you reach 3. Then, swap out the roller attachment for the cutter attachment and cut fettuccine, which you can either hang to dry or cook right away. Boil in salted water for around 3-5 minutes, then taste to make sure it’s done
  • It should float if done properly. Sauté shallots and garlic in butter until tender, then whisk in cream, salt, pepper, garlic powder, and bacon grease until smooth. Serve over grilled chicken or pork chops. On a medium heat, combine the ingredients. Toss in some freshly grated parmesan. When the fresh pasta is finished, toss it in and mix. Serve immediately with freshly grated parmesan and a sprig of fresh basil.

Recipe for Pasta: In a large mixing basin, whisk together the flour, eggs, 1 tbsp water, and 1 ml salt until smooth. Mix the contents for 30 seconds on setting 2 using a flat beater. Crunchy is the way to go here. Dough hook should be used in place of the mixer’s beaters. Knead the dough for 2 minutes, then add 1 tablespoon at a time of water until it is a satisfactory consistency. Empty the materials onto a clean table and hand knead until well incorporated, then set aside for 20 minutes to rest and set aside to rest Assemble the mixer and pasta roller in the desired configuration.

  • Feed dough into roller, catching it on the opposite side, while mixing on speed 2 with roller set to its widest setting.
  • Continue to roll out the dough until it is as broad as the roller.
  • As soon as it is broad enough, continue to feed dough through it, tightening the knob with each feeding until you reach 3.
  • It should float when done, so boil it in salted water for around 3-5 minutes and check the flavor.
  • Using medium heat, warm everything together.
  • Immediately after completing the fresh pasta, mix everything.

How Does the Kitchenaid Pasta Attachment Work?

The Kitchenaid Pasta Making Attachment is more than simply a single piece of equipment. This particular attachment is really a mix of three other attachments that are packaged together in a single box. All three attachments are powered by the same energy that drives the mixing attachments below and are connected to your Kitchenaid at the top. The first piece of equipment is the rolling attachment. When I make pasta, I usually run the sheets through the 1 setting, then switch to 3, then switch to 5. This way, the sheets are evenly distributed.

Instead, begin by running it through a modest number of times, then progressively increase the number of times it is run.

How to Use the Fettuccine/Angel Hair Cutting Attachment

Following the completion of the pasta sheets, it is time to cut the pasta. To make fettuccine or angel hair noodles, remove the sheet roller and replace it with either the fettuccine cutter or the angel hair cutter, depending on the style of noodle you desire.   • 3/4 cup all-purpose flour (sifted)
  • Additional flour for dusting
  • 3 1/2 cups butter (softened)
  • 4 big egg yolks, lightly beaten
  • 2 tablespoons water
  • 1/2 teaspoon salt

PREPARATION

Attach the flat beater to the stand mixer and place the flour, salt, eggs, and water (1 tablespoon at a time, adding more if necessary) into the mixing bowl, beating until well combined. Increase the speed of the mixer to 2 and mix until everything is fully incorporated. Remove the flat beater and replace it with the dough hook, kneading until the dough makes indents when you press your finger into it. Allow the dough to rest for approximately 20 minutes after covering it with plastic wrap or a moist tea towel.

  • Cut the dough into four pieces and use your hands to shape each piece into a flat rectangular shape.
  • Using a pasta roller, attach it to your stand mixer and turn on your mixer at speed 2 while running the pasta through it (see illustration).
  • Flour the dough, then adjust the roller attachment setting to 2 and repeat the procedure.
  • Once you’re finished, carefully shape the pasta into a ball and cover it with a tea towel while you repeat the process with the remaining three pieces of dough.
  • Set the mixer to speed 2 and begin putting the pasta into the attachment.
  • To use immediately, wrap the strand around your hand to form “nests,” or hang it over a clothes hanger to dry if you are not using it immediately.
