How to Cook Vermicelli Noodles Perfectly Every time

Detailed instructions on how to prepare delicate vermicelli without boiling it in order to consistently produce wonderfully springy (not mushy) noodles every time. There will be no more soggy noodles! When it comes to vermicelli, I’ve tried everything from mushy to firm to goopy. You name it, and I’ve probably done it. Even if I just follow the directions on the package and boil it for the amount of time specified, the outcome is consistently inconsistent; nonetheless, it is frequently gooey, even after running cold water over it.

So, what is the best way to cook vermicelli noodles and get them to turn out perfectly every time?

In order to share this technique with everyone, I just discovered a technique for soaking vermicelli, which I was really happy to learn about.

You don’t even have to run it under cold water to for it to work.

However, this procedure will only work on the thinner vermicelli, which are the ones that are most usually used in vermicelli rice salads or stir-fried noodle meals (some are thicker, almost like a spaghettini or spaghetti thickness, this method will not work on those types of rice noodles).

The one on the right is a little thicker, about the same thickness as a spaghettini – but it’s still vermicelli, don’t worry!

Let’s Start!

  1. First, we obtain a large enough bowl to accommodate the noodles in and fill it halfway with boiling water, allowing the noodles to soak for a few minutes. It’s important to completely submerge all of the noodles in water and cover the pot with a lid to keep the heat in (We use plates as lids). Soak it for the specified period of time specified on the box. For us, it took 1-2 minutes
  2. After that, we drained the water through a strainer or sieve to remove the debris. You may use it as is at this point, or you can leave the noodles in the strainer or bowl that they were soaking in
  3. Just make sure that the bottom of the bowl is free of any water to avoid sogginess. If you are not ready to use it right away, you can cover it with a towel or a cloth to keep it warm or prevent it from drying out. Using your fingers, you may loosen the noodles and utilize them after they have softened. It should have a good amount of spring to it.” As is, or you can fry it in a skillet to get some crispy, delicious fried vermicelli! Some of you may have noticed that there are hard sections where the noodle folds when it was dried
  4. These hard difficult bits do not soften readily with only soaking, so I just pull out these hard tough pieces and trash them.

The Noodles Taste Raw Still, What Gives?

This is frequently the case when the noodles need to be soaked for an extended period of time. When that happens, all I do is re-soak the noodles for another 1 minute in hot water or run the noodles under scorching hot water from the tap through a strainer/sieve for a few minutes till they are soft. Don’t forget to cover the pot with a lid to keep the heat in throughout the soak.

Types of Rice Noodles

Rice noodles are used in almost all Asian cuisines and may be found in many different varieties. They are available both fresh and dried. Dried rice noodles are the most prevalent type of noodles found in most grocery shops in the United States. Fresh rice noodles are more likely to be found in the refrigerated area of Asian stores than in Western ones. Rice noodles are known by many different names in different countries, based on the size and form of the noodles. In most grocery shops in the United States, however, they are simply referred to as “rice noodles” or “rice stick” noodles.

On the box, it’s rare to find out precisely how big the noodles are.

Due to the fact that the container is generally transparent, it is possible to inspect the noodles for yourself. The brand “A Taste of Thai” provides a nice graphic representation of each of the four different lengths of noodles that they sell. Rice noodles are available in four different varieties.

  • Very thin: These noodles, which are similar to angel hair pasta, may be referred to as “vermicelli” or “angel hair” in some circles. The noodles cook at a little slower rate, reducing the likelihood that they may become excessively soft. Cold water, extended soak: Soak the noodles in cold water for an additional 15 minutes.

Immediately boil the noodles for 2 to 6 minutes, then drain and rinse under cold running water.

Tips for Perfectly Cooked Rice Noodles

What Is the Best Way to Tell whether Rice Noodles Have Been Soaked Long Enough? Take a mouthful of the noodle to get started. A stiff or highly rigid texture indicates that the noodles have not been soaked for long enough. When done properly, the texture should be soft and delightfully chewy, al dente, and just malleable enough to wrap around your finger effortlessly. Keep in mind that as the noodles are cooked in a stir-fry, they will become a little softer. In order to make stir-fry noodles that are more firm rather than soft, soak them for at least 30 minutes.

  • Rice noodles that have been soaked for an excessive amount of time will have a texture that is comparable to overcooked Italian pasta – soft and mushy in consistency.
  • Additionally, when stir-fried, they may come apart, resulting in small bits of noodles rather than long noodles.
  • It’s a question of personal taste, but I always choose to.
  • It also cools the noodles and halts the cooking process, preventing them from continuing to soften after being removed from the boiling water.
  • Rice noodles are stir-fried for only a minute or two in a hot wok or nonstick pan after they have been soaked and rinsed.
  • The best way to get the best fried texture for rice noodles is to pan fry them.

Don’t cook a large number of noodles at the same time. The noodles should be added to the wok in two separate batches if you’re cooking more than 6 ounces of noodles. This will ensure that all of the noodles have sufficient time to cook directly against the hot pan.
