Place the heatproof dish with the mustard sauce on top of the saucepan with the remaining pasta water and heat until the mustard sauce is hot. Toss in the pasta mixture to coat it with the sauce and cook through. Drizzle with the olive oil and sprinkle with the cheese to finish. Toss one more to coat, then heat through. Before serving, sprinkle a pinch of salt and a sprinkling of parsley on top of the dish to finish it off.
