Ingredients
- 3 cups whole wheat penne or rotini pasta
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon oil (canola or vegetable)
- 2 1/2 cups boneless, skinless chicken breasts 16 ounces frozen chopped broccoli
- 1 cup nonfat milk
- 8 ounces low fat cream cheese, cubed
- 1 box (16 ounces) frozen chopped broccoli 1/3 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Remove the skin off the chicken and chop the flesh into bite-sized pieces on a cutting board. Remove the fat from the bird. Hands should be washed. Begin by bringing a big pot of water to a boil in preparation for the pasta
- On medium high heat, heat the oil in a big skillet. When the oil is heated, add the chicken cubes to the skillet and toss to coat with the oil. The chicken should be cooked for 20 seconds before being stirred again. Cook the chicken for 7 to 9 minutes, depending on how thick it is. Every 20 to 30 seconds, turn the chicken pieces to ensure even cooking. When the chicken has done cooking and has reached 165 degrees Fahrenheit, remove it from the skillet. It should be covered to keep it warm. Cook the pasta according to the package guidelines. 3 minutes before the end of the cooking time, add the frozen broccoli. Drain the pasta and broccoli of any excess water they may have accumulated. Bring the food back to the pot. Do not cover the skillet
- Instead, pour in the milk and cream cheese. Over a low heat, continually stir the mixture to combine the flavors. Garlic powder, Parmesan cheese, salt, and pepper are added after the mixture has thickened and been smoothed out. Mixture should be stirred. Afterwards, add the cooked chicken and heat the combination
- Combine the meat mixture with the pasta and broccoli mixture
- And serve immediately. Serve

Instead of chicken breasts, boneless chicken thighs and legs or leftover chicken can be used for the breasts. You may substitute other veggies for the broccoli if you want. To add color and flavor, sprinkle a few red pepper flakes on top. Make careful to use a clean chopping surface for this recipe.
